Carpe Diem White
Tasting Notes: It is typically English in style, displaying delicate fresh fruit and floral hedgerow characters on the nose. It displays great balance with a medium fruit intensity of apple, white plums and pear that express the perfect ripeness. On the palate it is crisp with delicate apple and herbaceous flavours.

Winemaker's Notes: The grapes were picked by hand and fermented cool, in stainless steel tanks to preserve freshness and fruit characters. After fermentation the wine was aged for a short period before being bottled to preserve the natural youthfulness of this wine.

Grape Variety: Seyval Blanc
Body: Light
Sweetness: Dry
Alcohol: 11%
Style: Light, crisp and delicate. In the style of an English Vinho Verde, with aromas and flavours of green apple, pear and citrus.
Serve: Chilled between 8°C and 10°C.
Food Pairing: A very food friendly wine! Perfect with light salads and seafood.


Carpe Diem Red
Tasting Notes: Dark purple in colour, this red wine is deceptively light bodied and fruity. Aromas of black cherries, berries and spice. The palate is soft with gentle stewed fruits and delicate tannins.

Winemaker's Notes: Our Carpe Diem Red was fermented and aged in stainless steel; having seen no oak it is youthful, fruit filled style. The grapes used were fermented with daily pump overs to extract more colour and body. After 3 weeks this was then pressed and aged in tank before being put into bottle in the Spring of 2025.

Wine: Still Red
Grape Variety: Rondo
Body: Light
Sweetness: Dry
Alcohol: 12%
Style: Light and fruit-forward, displaying aromas and flavours of dark stewed fruits and spice.
Serve: Between 14°C-18°C.
Food Pairing: Perfect alongside a wide variety of cuisines. Excellent with turkey and roast duck.


Carpe Diem Rosé
Tasting Notes: This rosé has a delicate salmon pink hue. Fresh, delicate and fruity, with aromas of rose red fruits. Cherry and strawberry characters continue in a palate that is lively and refreshing.

Winemaker's Notes: All grapes were picked by hand, typically most of the varietals undergo a very short maceration to extract a delicate pink hue. After this, they are pressed and fermented cool, predominantly in stainless steel tanks to preserve freshness and fruit characters. A small percentage of the wines are fermented in barrel to add depth and roundness to the palate. After fermentation, we frequently stir the lees, providing further smoothness and mouthfeel. This blend was created to provide a refreshing and youthful rosé.

Wine: Still Rosé
Grape Variety: Dornfelder, Pinot Noir, Chardonnay
Body: Light
Sweetness: Off-Dry
Alcohol: 11%
Style: Fresh, fruit-forward and aromatic, with bright cherry, raspberry and strawberry on the nose and palate.
Serve: Chilled between 8°C and 10°C.
Food Pairing: Its acidity will cut through oily foods and pair perfectly with smoked salmon gravlax.


Portscatho Pinot Noir Précoce Rosé

Tasting Notes: On the nose there are powerful aromas of strawberry, cherry and vanilla. The palate is dry but fruit forward displaying red fruit and cream characters. Similar in style to a Sancerre Rosé.

Winemaker's Notes: 
Only made in the best years exclusively from a small parcel of Pinot Noir Précoce grapes grown at our Portscatho vineyard. These grapes were harvested by hand in perfect condition in the first week of September, and gently whole bunch pressed resulting in a pale salmon coloured dry rosé.

Wine: Still Rosé
Grape Variety: Pinot Noir Précoce
Body: Light
Sweetness: Dry
Alcohol: 11.5%
Style: Fresh and fruit-forward with aromas of strawberry, cherry, and vanilla, followed by red fruit and cream flavours.
Serve: Chilled at 10°C.
Food Pairing: Perfect as an aperitif, or alongside summer salads such as a Niçoise.

Pinot Noir

Tasting Notes: A pale red Pinot Noir, the colour is deceptive, not revealing the powerful red fruits hidden within. The nose is full of intense red cherry, wild strawberry and a delicate hint of its time spent in barrel. The palate has good weight and shows generous red fruit and spice. Wonderfully summery and food friendly.

Winemaker's Notes: Only the ripest parcels of Pinot Noir were used in our 2024 red. The wine was fermented and aged in oak barrels, spending just over a year in oak before being bottled in the Autumn of 2025.

Body: Light
Sweetness: Dry
Alcohol: 12%
Style: Light and fruit-forward with cherry, wild strawberry and a hint of spice on the nose, finishing with soft red fruits and gentle oak.
Serve: Lightly chilled between 14°C-16°C.
Food Pairing: Pair with lamb, game, or enjoy on its own.


Brut Classic Cuvée White
Tasting Notes: Pale lemon green in colour with a lively mousse that quickly settles to a steady stream of fine bubbles. Aromas are a combination of apples, citrus and freshly baked bread. On the palate, this wine shows great vivacity, complexity and a fine mousse.


Winemaker's Notes:  Our classic non vintage blend of the best parcels of Chardonnay and Pinot Noir, 70% of the base wine was from 2017, the remainder reserve wines from previous vintages. The grapes were whole bunch pressed and cool fermented separately, with only the free run juice used for this sparkling, resulting in a clean, crisp and delicate wine.

With secondary fermentation taking place in bottle, the wine was then aged in bottle for a minimum of 5 years, after which the bottles were disgorged and aged for a further 6 months on cork. A small part of the overall blend was both fermented and aged in oak to further the complexity and mouthfeel produced by a such a long period on its lees.

Sweetness: Dry
Alcohol: 12%
Character: Elegant and racy, this refreshing sparkling displays apple, lemon shortbread and freshly baked bread on the nose and palate.
Serve: Chilled between 8°C and 10°C.
Food Pairing: Excellent with seafood! Enjoy with scallops or oysters
